Hazard Analysis and Critical Control Point (HACCP) is a proven, cost-effective systematic management tool to ensure food safety that identifies critical areas of handling and demonstrates where resources should be targeted to reduce the risk of selling an unsafe product. Through a combination of lecture and classroom exercises participants learn to write and implement HACCP Plans in food processing, distribution, and preparation environments.
